Baby Spinach Salad

Ingredients - Salad:

16 oz package of baby spinach
-
8-10 oz fresh mushrooms - sliced
-
8 oz can sliced water chestnuts
-
4 T. imitation bacon bits
-
Chinese noodles*
-
6-8 oz fresh snow peas - blanche**
Ingredients - Dressing:
Method of Preparation

Blanche** snow peas
-
Wash spinach well and dry.

Mix all ingredients of salad, except for
Chinese noodles, together in extra large bowl.

In separate bowl mix all dressing
ingredients.

Keep both chilled until ready to serve.

Just before serving add Chinese noodles

Toss salad and dressing together and
serve.
*Chinese noodles are available commercially in two major types, wide
and thin (spaghetti) style. For this recipe, I prefer to use the
spaghetti style but have used the wide type as well.
**Blanche - put snow pea pods into rapidly boiling water for 30 - 45
seconds. Immediately drain and run under ice cold water.
Acceptable Substitute: Use regular instead of baby spinach.
